THE OMAKASE BERRY is heart-shaped and marshmallow tender, with a scent that calls to mind strawberry scratch-and-sniff stickers and hard candies more than actual fruit.

When Hiroki Koga, co-founder of the vertical farming company Oishii, started knocking on kitchen doors at Michelin-star restaurants with samples in 2018, he was charging over $6 per strawberry. And he sold out.
